I must admit I was super excited when Miss Julie asked me to guest post for her while she heads out on vacation. Recently coming back from vacation myself, I knew exactly what I wanted to share with you all, and yes it is absolutely cocktail related.
Beer-garitas are a serious staple amongst me and my friends during the summer months and they sure taste sinfully delicious. I mean beer + margaritas = a pretty freakin' good time if you ask me, especially while on vacation! Plus considering it’s literally been 90 degrees for the past few weeks, I figured these were completely appropriate. So I came up with a skinny version that I know you’ll just swoon over, they just require you to make your own homemade limeade and choose your favorite light beer and tequila.
Easy peasy!
And your waistline will thank you.
Skinny Beer-garitas
Here are your ingredients:
2 cups frozen limeade (recipe below)
2 bottles of light beer
1/2 cup tequila
Limeade:
1 cup fresh lime juice + 2 limes for zesting
1 1/2 cups of water
1/2 cup Splenda sugar blend
To make the limeade:
Zest two limes. In a large saucepan, combine water, Splenda and lime zest and heat until Splenda is completely dissolved. Remove from heat and allow to cool at room temperature. Stir in lime juice and freeze your limeade concentrate until ready to use.
To make the beer-garitas:
In a pitcher, combine frozen limeade, 2 beers and 1/2 cup of tequila. Place pitcher in the freezer overnight until frozen through, then mix so that it is in slushy form and serve. Enjoy!
