I spent much of today with, "I Like Big Butts," in my head. Yeah. It was that kind of day.
And to be honest, the last thing I wanted to do was spend time in the kitchen and cook when I got home. I seriously.... seriously... considered ordering a pizza. And after a half-hour conversation with myself about the pros and cons of ordering said pizza (and let's be honest... the only pro involved my belly being happily filled with totally bad for you yum yums), I put the phone app away and headed to the kitchen.
I emerged with these tacos and I won't lie, I was pleasantly surprised by the final product. They're super flavorful, healthy, colorful... and it helped me clean out the fridge in the process.
Oh, and the bonus feature: hypothetically speaking, if your husband thinks vegetables are going to kill him, make him *gasp* healthy, attack him in his sleep, etc... this recipe is great. Because, hypothetically, said husband can omit the veggies and throw the meat and cheese in a reguar flour tortilla. Healthy food, be damned. *crisis averted*

Fancy (Not So Schmancy) Tacos
INGREDIENTS
1 lb. 95% lean grass-fed ground beef
roasted veggies (minus the onions; replace seasoning with salt)
2-4 Tbsp taco seasoning
3 Tbsp reduced fat feta, crumbled
2 Tbsp low-fat sour cream
8 whole wheat tortillas (I used BonSavor)
DIRECTIONS
Brown meat and season according to packaging. Lightly line warmed tortillas with sour cream, add beef, top with veggies and sprinkle with feta. Enjoy!
