Okay. So I'll be the first to admit that roasted veggies don't sound all that impressive.
... but a show of hands. How many of you don't get enough veggies in your diet?
Yeah. That's what I thought.
So here's a way to get some more veggies and some good fats in your system. Plus, you look a little bit like a culinary genius. All fancy with your oven roasting abilities. It's like being a kitchen super hero... so feel free to tie a kitchen towel around your neck, grab a whisk as your wand and declare victory over the evil root vegetables!!
... or... you could just eat them... you know... and be super boring.

2 tbsp olive oil
2 summer squash, cubed
3 zucchini squash, cubed
1 sweet yellow onion, sliced in sections
1 pint cherry tomatoes
Weber roasted garlic & herb seasoning
1. Preheat oven to 425 degrees. Using a baking sheet with sides, spread vegetables out evenly.
2. Drizzle veggies evenly with olive oil and sprinkle with seasoning (as much or as little as desired). Toss veggies to coat.
3. Bake for 15 minutes; pull pan out and toss veggies. Bake for another 10 to 15 minutes, or until well browned.
